I feel fortunate to be able to cook from ingredients I picked myself last summer and autumn, enjoying wild foods at times of midwinter is one of the privileges of living in the north! In addition, spending a nice mid-summer day wandering in the forest and harvesting the delicacies of the wild and remembering the foraging trip afterwards during winter is just something great. Finnish forests are full of highly nutritious and delicious foods and with just a little bit of effort it´s possible to get a nice amount of berries and mushrooms for the winter. Of course you need to know where to look and also be able to recognize them.
In Finland we have one the purest environments so you don´t have to worry about air pollution, pesticides or fertilizers. For example picked berries can be eaten straight away while hiking; washing, boiling or other processing is not required. All of our berries have lots of carotenoids which are known to prevent depression and increase your general immunity if used regularly. Finland´s northerly location and intense summer also assures that plants/herbs that grow here in the wild are packed full of flavor, scent, color and nutrients.
The pictures of mushrooms on this page include Boletus Pinophilus and Cantharellus Cibarius, both of which are excellent mushrooms to cook with and actually they are some of the most prestigious mushrooms of them all. Especially the dried boletuses are so easy to use in all kinds of cooking. Bilberry (vaccinium myrtillus) smoothie is a dessert at its best!
